
2 egg whites, beaten
¼ c dry oatmeal
1 TBS. 2 % cottage cheese
1 tsp. cinnamon flax oil (www.spectrumorganic.com)
¼ c sugar-free cozy cottage syrup
½ banana sliced
In a small bowl, combine the eggs, oats, and cottage cheese. Set aside for 10-15 minutes to let the oatmeal soften. Heat a non-stick griddle over medium heat. Divide the batter in half to make two pancakes, pour onto the griddle. After 3 minutes, turn over pancake to cook the other side. Serve with bananas, syrup, and flax oil.
